Mini Raspberry Yogurt Phyllo Cups are a quick and delicious dessert to make for your next brunch or dinner!
In a small bowl whisk together the yogurt, jam, vanilla bean paste and almond extract. Spoon about a teaspoon of the yogurt mixture into each mini phyllo cup and place on a platter. Top the filled phyllo cups with a raspberry. Serve immediately or store in the fridge for no longer than an hour.
Notes: These are best served right away as the shell starts to soften from the filling.
