Description

Dark chocolate cakes with a delicious minty icing for two!

Ingredients

  • FOR THE CAKE:
  • ½ cups All-purpose Flour
  • ¼ cups Sugar
  • 2 Tablespoons Sugar
  • 3 Tablespoons Unsweetened Cocoa Powder
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Baking Powder
  • 1 dash Salt
  • 2 Tablespoons Egg Beaters/Egg Substitute
  • 2 Tablespoons Unsweetened Applesauce
  • 3 Tablespoons Melted Chocolate
  • ¼ cups 1% Milk
  • ¼ cups Brewed Coffee
  • FOR THE ICING:
  • 4 Tablespoons Prepared Or Store Bought Cream Cheese Frosting
  • ⅓ teaspoons Peppermint Extract
  • Green Food Coloring
  • 2 Tablespoons Chocolate Chips

Preparation

Preheat oven to 350 F. Grease two small/individual serving-size ramekins with nonstick cooking spray and set aside.

In a large mixing bowl, whisk the flour, sugar, cocoa, baking soda, baking powder and salt together until combined. Add in the egg beaters, applesauce, melted chocolate, milk and coffee and mix until smooth. The batter should be thin, so don’t worry!

Pour the mixture evenly into the two ramekins. Bake for about 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Remove ramekins from the oven and allow to cool.

Meanwhile, in a small bowl mix the frosting, peppermint extract and green food coloring (as much as desired) together. Frost each cake with icing and then sprinkle with chopped chocolate chips.
