Description

These Mandarin orange cranberry muffins are a juicy, refreshingly fruity and not-too-sweet treat with a crunchy streusel topping.

Ingredients

  • FOR THE MUFFINS:
  • 1-½ cup Cranberries
  • ¾ cups Granulated Sugar, Divided
  • 2-¼ cups All-purpose Flour
  • 2-½ teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • ¾ teaspoons Salt
  • 1 teaspoon Vanilla
  • 1 whole Egg
  • 1 teaspoon Mandarin Orange, Zest
  • ⅞ cups Mandarin Orange Juice
  • ¾ sticks Butter, Melted
  • ¾ cups Chopped Nuts (optional)
  • FOR THE STREUSEL TOPPING:
  • 1-½ Tablespoon All-purpose Flour
  • 1-½ Tablespoon Granulated Sugar
  • 1 Tablespoon Butter

Preparation

1. Preheat oven to 375ºF. Coarsely chop cranberries and mix with 1/4 cup sugar. Set aside.
2. Place streusel ingredients into a small bowl and combine with a pastry blender or to knives until mixture is crumbly.
3. Line a muffin tray. In a bowl combine flour, remaining 1/2 cup sugar, baking powder and soda, salt and vanilla.
4. In another bowl, beat the egg and add Mandarin orange zest, juice and melted butter.
5. Add dry mixture to wet ingredients and stir until just combined. Mix in cranberries and optional nuts.
6. Fill 12 muffin liners with the batter, sprinkle streusel crumbles on top and bake for 15-20 minutes until muffins are golden brown.

My husband made these. His comment was “too many bowls” (ha ha), but they were fantastic. Just the right amount of sweetness to complement the tartness of the cranberries. GREAT RECIPE. We will make these again.

Made these today – not too sweet as promised. They turned out beautifully, with my only substitution being tangerines for the mandarins. (No mandarins in the market.)
