Magical Pudding “Pie”

Description

This is an amazing dessert for when you’re trying to shed some pounds, but even the non-dieters will love this one! What makes this dessert “magical” is that after sitting for the required amount of time, the Saltine crackers taste just like a phyllo dough!

Note: Cook time is chill time (this is best if refrigerated overnight).

Ingredients

  • 1 box (1.4 Oz. Size) Sugar Free Chocolate Instant Pudding (or Your Favorite Flavor)
  • 2 cups Skim Milk
  • 32 whole Salted-Top Saltine Crackers (MUST Be Salted)
  • 1 container (8 Oz. Size) Fat-free Cool Whip

Preparation

In a medium sized bowl mix the instant pudding and milk together and place into the refrigerator for 10 minutes.

Place 16 crackers in the bottom of an 8X8 pan. Spoon half of the pudding mixture on top of the crackers, spreading evenly.

Place the other 16 crackers on top of the pudding, and then spoon the other half of the pudding mixture on top of the last set of crackers.

Top with the whole container of Cool Whip. Cover with plastic wrap. Refrigerate for at least 24 hours.

*We also like this with butterscotch pudding, or vanilla, and I slice a few bananas over each layer for a mock banana cream pie!

i am not a pie crust person, even though i love baking! i think this is a neat workaround with room for variation–thanks for adding it!

Good twist on traditional pie. I think next time I would add a third layer of saltines, as I thought it needed more of a crust.
