These cold and refreshing popsicles are sold at corner bodegas and neighborhoods in Puerto Rico. Growing up, there was an old lady down the street that would sell them for 25 cents. It is creamy and delicious and perfect on a hot summer day.
Mix evaporated milk, coconut milk, sugar, vanilla, egg yolk and cinnamon in a bowl. Add additional sugar and cinnamon to taste.
Pour into popsicle molds.
Freeze and enjoy!
*If you are concerned about the egg yolk, it is not a do or die ingredient. Consuming raw products is left to your discretion. I have been eating these things probably since I was born.

I loved ice cream, but now am severely intolerant of lactose. I have found that coconut milk, or cream of coconut, often makes a delicious substitute. Also have made a combo of mango and cream of coconut, with lime juice. Can’t wait to try these!

These look delicious. My brothers love coconut. I can’t wait for the weather to warm up so I can make these for them.

My Granda used to make these coconut limbers from scratch. She also made limbers of tamarind and guava. Sooo good!
