Description

A beautiful chocolate cupcake with a kiss in the middle and a beautiful chocolate ganache on top. The perfect psychological pick-me-up!

Ingredients

  • CUPCAKES
  • 2 cups Sugar
  • 2 cups All-purpose Flour
  • ¼ teaspoons Salt
  • ½ cups Buttermilk
  • 2 whole Eggs
  • 1 teaspoon Baking Soda
  • 1 teaspoon Vanilla
  • 2 sticks 1 Cup Butter
  • 4 Tablespoons (heaping) Cocoa Powder
  • 1 cup Water, Boiling
  • 18 whole Hershey's Kisses, Unwrapped
  • Canned Pitted Cherries (optional)
  • GANACHE
  • 8 ounces, weight Bittersweet Chocolate
  • 1 cup Heavy Cream
  • 6 Tablespoons Corn Syrup
  • 2 teaspoons Vanilla Extract

Preparation

Preheat oven to 350 degrees. Spray 18 muffin cups with baking spray.

To make the cake batter, combine flour, sugar, and salt. Set aside.

In a separate container, combine buttermilk, eggs, baking soda, and vanilla. Stir to combine and set aside.

In a saucepan, melt butter over medium heat. Add cocoa powder and stir to combine. Add boiling water, allow to bubble for a few seconds, then turn off heat.

Pour chocolate mixture over flour mixture. Stir a few times to cool the chocolate. Pour buttermilk mixture over the top and stir to combine.

Pour 1/4 cup cake batter into each muffin cup. Lightly set one kiss in the middle of each cupcake; do not press down.

(Alternately, you can add 3 canned, pitted cherries to each muffin cup before adding the batter.)

Bake for 20 minutes. Allow to cool for 5 minutes in the pan, then remove cupcakes and allow to cool on a baking rack.

To make the ganache, heat cream and corn syrup over medium heat. Chop chocolate and add to a bowl. Add vanilla to cream mixture, then pour cream mixture over the top of the chopped chocolate. Whisk together until melted, smooth, and glossy.

Dunk cupcakes in ganache. Allow to cool and set before serving.

I made these cupcakes for Valentine’s Day this year and brought them into work. Not only were they a hit with the coworkers, but my boyfriend now insists I put Hershey Kisses in every single cupcake I make!

I don’t think I’ll make the cupcake part of this recipe again, at least with the Hershey’s chocolate kiss in them. Half the cupcakes the kisses fell out of the bottom….and the ones that stayed in didn’t really add anything (but a shock for those people eating them who didn’t realize what they were biting in to — one co-worker exclaimed “oh my god what fell in the batter, gross!”). Maybe a different type of chocolate that might melt in the oven would taste better? I tried a different frosting (and had issues with that as well, so perhaps it was not “my day” for baking) so I can’t comment on the ganache.

These were a hit at the office and with my family! I’ll definitely be baking them again! The cupcake went well with the vanilla buttercream that I used too.

I’m not an expert baker, at all. I can list the things I’ve tried baking from scratch like this!!! I don’t own an electric mixer or anything fancy. I made these for my husband’s birthday and they turned out JUST like the picture… and tasted *hopefully* just as they were supposed to!! They were a treat for DAYS!! (because it makes sooo many) and we had tons of the leftover ganache. Any suggestions for what to DO with all of it (besides get a spoon and dig in? hah)?

Alright, P-Dub. Just like I promised, I made these for Valentine’s Day. HUGE hit. I gave my husband the cherry-stuffed versions, while me and the kids ate the Hershey Kiss-stuffed ones. Love, love, love.

Yep…LIFE by chocolate is the perfect name for these. Moist, flavorful and the look so pretty when done. I’ve made them several times and can’t imagine my life being complete without them. Never need to google “chocolate cupcake recipe” ever again!

Made these for a friend’s birthday, except since I was in a time crunch I made ganche the easy way (cool whip + bakers chocolate melted down.)
They were a hit! And so delicious!

I used the frozen, pitted, cherries and kisses. Definitely was a nice extra treat.
