My Grandma’s recipe. These are the best thing to do with zucchini EVER!
Preheat oven to 375 degrees.
Cream together butter and sugar. Add egg and lemon peel; mix well. Add flour, baking powder, and salt. Incorporate until smooth. Stir in zucchini and nuts.
For frosting, whisk together powdered sugar and lemon juice in a small clean bowl. Set aside.
Drop cookie dough onto a greased cookie sheet in tablespoon-sized balls. Bake for 10 minutes, or until very lightly golden. Frost while still warm.
Cool on a wire rack. Enjoy the yummiest cookies ever!

I was out of zucchini, so I made these with ginger and sour cream instead. Delish. I can’t wait to try them out with zucchini!
