Lemony and easy sugar cookies.
Cream the butter, then add powdered sugar. Blend in the egg, followed by the extracts, zest, salt and flour. Wrap in plastic wrap and chill for about a half hour.
Preheat oven to 375°. Grease a cookie sheet.
Roll out to 1/4-inch thickness on a well-floured surface. Cut out with a circle cookie cutter, then cut each in half to make semi-circles.
Bake for 8-10 minutes until edges are lightly golden.
Let cool, then frost with your favorite lemon frosting/icing. Lemon Royal Icing was used in the photos.
Makes 80 cookies.

I made these this weekend in honor of spring. They were very easy, with a great buttery flavor. Not quite as lemony as I’d hoped, but still tasty. I frosted them with a lemon creme cheese frosting.
