This is my all-time favorite cookie by my dear Aunty Chelo. This recipe has a nutmeg and sugar crust twist to it–warm and chewy–that set it apart from all other cookies. EN-JOY!! And I mean that from my heart!!
Note: This batch makes 3 1/2 dozen cookies.
1. Combine and beat thoroughly shortening to eggs.
2. Sift dry ingredients together and add to the shortening and egg mixture.
3. Add in lemon juice and mix well.
4. Measure by level TBLSPs onto greased cookie sheet.
5. Flatten the drop of dough with the bottom of a glass which has been covered by a damp cloth.
6. Sprinkle lightly with nutmeg sugar and Bake 10-12 minutes in 375 degree oven.

Wonderfully light cookies! The lemon flavor is so refreshing, great for desert after a heavy meal, or just for a sweet snack.

So good these are almost painful! I took several for my lunch yesterday and when I was done eating them I stuck my nose in the plastic bag and inhaled….ahhhhhh yummmm.
