These lemony, buttery cookies are easy to make. They are one of our favorite cookies and a “must have” on Christmas cookie trays.
Combine flour, corn starch, powdered sugar and lemon rind in a large bowl.
Blend in butter until a soft, smooth dough forms, using either an electric mixer or a large wooden spoon.
Roll dough to 1/4″ thickness on a lightly floured board. Cut into shapes with cookie cutters.
Place on ungreased cookie sheets. Sprinkle with colored sugar.
Bake at 300F for 15-20 minutes or until edges are lightly browned. Remove from sheet; cool completely. Makes about 4 dozen 2 1/2″ cookies.

Mine turned out a little dry. I made some without the sugar sprinkles on top and they were definitely lacking. They were ok, but not to die for, at least for me.

These are wonderful cookies. I used lime zest instead of lemon added about 1/4 cup of lime juice as I was a bit short on butter. I was very impressed with how they turned out. I’ll definitely make these again.
