Awesome summertime candy cookies. These cookies have a really good texture and a surprise every time you bite into them with the hint of lemon! A kid friendly favorite, let the kids help by crushing the candy in a Ziploc bag.
Preheat oven to 350.
Cream sugar, shortening, and eggs.
Add extracts.
Stir in dry ingredients, lemon zest, and crushed candy.
Roll dough into 1 inch balls, flatten slightly and bake on baking sheet for 10-12 min.
Let cool slightly on pan before removing.
Make a glaze of powered sugar and lemon juice to lightly brush the tops of the cookies with.

My family is eating these as fast as I get them out of the oven – we love them! Great lemon taste. The only problem I had was finding lemon drops – couldn’t find the old fashioned kind anywhere and ended up usinig Lemonheads. But they worked fine. I wonder if the regular lemon drops might be tarter, tho. But I’ll definitely be making these again.

Very rich I added more lemon extract to the cookies and made the glaze as tart as I could get it but I love lemon. Wonderful recipe though I love the candy in it gives it a bit of a suprise to have the little extra lemon kick when you bite into a piece.
