Description

Using a boxed cake mix and fresh squeezed lemon juice, this cake is amazing!

Ingredients

  • 1 box (18.25 Oz. Box) White Cake Mix
  • Additional Required Ingredients Specified In Mix Package (typically Eggs And Oil—you'll Substitute Lemon Juice For The Water Called For In The Package Instructions)
  • 1-½ cup Fresh Squeezed Lemon Juice, Divided
  • 1-¼ cup Powdered Sugar

Preparation

Following the instructions on the cake mix box for ingredients, except substitute lemon juice for the water. Reserve 1/4 cup lemon juice for the icing. Pour cake batter into a greased cake pan. Bake according to the instructions on the box.

Meanwhile, in a small bowl, mix the remaining lemon juice with the powdered sugar. While cake is still warm, pour icing over the cake. Serve with Cool Whip or alone, either way is awesome!

Hi there, mine did not rise as it would of using water, I do believe it is because of using the lemon juice in place of the water. But is moist and delicious :-)

Debsdiner, my husband made this today and it is delicious. I have just one question——our cake didn’t rise——was it supposed to? It didn’t change the flavor at all, and there is just no way to mess up this cake.
Please help us solve our flat cake mystery.
