A deliciously simple, gluten-free dessert that will have you wishing you bought more chocolate and cashews.
Layer cashews in a pie plate or glass dish lined with parchment paper. Melt chocolate in a microwave safe dish in 30-second intervals until melted and smooth. Pour chocolate over cashews and combine until the chocolate is evenly distributed. Allow to sit and firm up at room temperature or put them in the freezer for a couple of hours. If you choose this method, store them in the freezer so they stay nice and firm.

Yum! I make cashew clusters every Christmas. I’ve found that the halves and pieces actually work better then the whole cashews. You get more chocolate in the “crevasses”, and more salt. : )
