Description

These were the most time consuming cookies I’ve ever made, but well worth it. The recipe makes about 4 dozen cookies! Perfect for a big party (Pirogi Festival in my case) or half the recipe for smaller gatherings.

Ingredients

  • 2 cups Unsalted Butter, At Room Temperature
  • 16 ounces, weight (2 Packages) Cream Cheese, At Room Temperature
  • 4 cups Flour (You'll Need Extra To Dust The Counter)
  • 2 cans Fruit Filling
  • 1 whole Egg White
  • ½ cups Powdered Sugar

Preparation

Preheat oven to 350.

Mix together butter and cream cheese.

Add flour one cup at a time.

Once dough is combined knead on counter for 5 min.

Roll out dough to 1/2 inch thickness on a WELL floured surface (I’d recommend dividing the dough and rolling it out little by little).

After dough is rolled cut into 3×3 inch squares.

Place one teaspoon filling into the center of the square.

Fold corners of square to connect edges.

Place on and ungreased cookie sheet and brush with egg whites.

Bake for 15-17 minutes until golden brown.

Dust with powdered sugar.
