Description

A co-worker named Kim changed my life with this cake. You on a diet? Watching fat? Watching calories? Keep moving, this is not the cake for you.

Ingredients

  • 1 box Vanilla Wafers, 12 Oz Box, Crushed
  • 1 cup Butter
  • 2 cups Sugar
  • 6 whole Eggs
  • ½ cups Whole Milk
  • 1 cup Chopped Pecans
  • 1 package Flaked Sweetened Coconut, 7 Oz

Preparation

Put the Vanilla Wafers in a big Ziplock bag and crush them. I use my rolling pin, but if you’re having a bad day take a meat mallot and go to town baby.

Cream the butter and sugar together until smooth.

Add eggs, one at a time, beating well after each addition. Add crushed Vanilla Wafers to the creamed mixture, adding alternately with milk.

Add coconut and pecans. Pour into greased and floured tube pan, like a bundt pan. Bake at 300 degrees F for
1-1/2 hours. Cool and turn out onto a rack.

It’s fabulous warm with vanilla ice cream. It’s beyond belief cool with a dollop of fresh whipped cream.

It’s also a life changing experience.
