My family’s authentic Swedish recipe. An annual Christmas tradition. They aren’t too sweet and melt in your mouth!
In a large bowl with an electric mixer beat butter and sugar until fluffy. Add egg yolk (reserve egg white) and almond extract, stir. Stir in flour. Turn dough onto an ungreased 10 x 15″ jelly roll pan. Spread evenly to edges of your pan. Beat egg white until foamy white. Spread evenly over dough. Spread nuts on top. Combine 1 tablespoon sugar and 1/4 teaspoon of cinnamon. Sprinkle over nuts.
Bake at 350 degrees for 25 minutes or until lightly browned. Remove from oven. Cool in pan on a wire rack for 10 minutes. Cut cookies into 8 lengthwise strips, then into 12 diagonal cuts to form diamond shapes. Cool thoroughly in pan. Remove carefully with a spatula. Store in air tight container at room temperature.

My son-in-law makes these, and I even made them once for Christmas (I am not much of a cookie baker!). They are very very good!
