Cream cheese and coconut filling on top of a buttery cookie, topped with semi sweet chocolate. YUM!
For the cookies:
Cream all ingredients but the flour until light and fluffy. Add flour and mix to combine. Shape into small balls. Make a thumbprint in center. Place on a Silpat or parchment lined baking sheet. Bake at 350 degrees F for 12-16 minutes, or until edges are just starting to turn golden. Cool.
Filling: Mix together the cream cheese, nuts, coconut and vanilla. Blend in powdered sugar and flour. Top cookies with 1/2 teaspoon of filling, placing it in the thumb print indentation.
Topping: Melt these ingredients in a saucepan over low heat. Once melted, spoon over cookies. Let the cookies sit several hours before storing.
Makes about 70 cookies.
*I usually double the topping…we like ‘em chocolaty!
