These cookies are classic sugar cookies, but classic for a reason.
Preheat the oven to 375ºF. Cream the butter and sugar in a stand mixer and add the egg and vanilla. Mix just to incorporate, don’t worry about lumps. Add the flour, baking soda, and cream of tartar and mix to combine and form a soft, supple cookie dough.
Roll the cookie dough out about 1/4 inch thick and cut out the cookies with a cookie cutter. I used a 2 1/2 inch circular cutter and that made 28 cookies. You could use any shape, you just may end up with more cookies or less cookies depending on the size of the cutter.
Once you have cut as many cookies as you can out of the sheet of dough, ball the scraps together and roll out the dough again. Repeat this process until almost all of your dough is gone.
Place the cookies on a baking sheet lined with parchment paper and bake for about 7 minutes, or until the edges of the cookies are golden. Enjoy!
