Description

Squishy, yummy, and homemade. These go well with homemade hot chocolate mix. Wrap it up together and you have a great gift!

Ingredients

  • 3 envelopes Gelatin (like Knox)
  • ½ cups Cold Water
  • 2 cups Granulated Sugar
  • ⅔ cups Light Corn Syrup
  • ¼ cups Water
  • ¼ teaspoons Salt
  • 1 Tablespoon Vanilla Extract
  • Cornstarch (for Dredging)
  • Powdered Sugar (for Dredging)

Preparation

Line a 9×9 pan with plastic wrap and lightly oil it. Set aside.

In the bowl of an electric mixer, sprinkle gelatin over 1/2 cup cold water. Soak for about 10 minutes.

Meanwhile, combine sugar, corn syrup, and 1/4 cup water in a small saucepan. Bring to a rapid boil and boild hard for one minute.

Pour the boiling syrup into the soaked gelatin and turn the mixer on high, using the whisk attachment if you have one. Add the salt and beat for 12 minutes. After 12 minutes, add in vanilla and beat to incorporate.

Scrape marshmallow mixture into the prepared pan and spread evenly. The mixture will be extremely sticky so you may need to lightly oil your hands and spatula. Put another lightly oiled piece of plastic wrap on top of the mixture and press lightly to create a seal. Let sit until completely cooled and firmly set. Remove from pan and cut into equal pieces using scissors or a pizza cutter (lightly oiled).

In a shallow dish, combine equal parts cornstarch and powdered sugar. Dredge each marshmallow, shake off excess, and store in an airtight container.

I made a batch with peppermint candies crushed in them and they were great. Just crush the candy and add it in when you add the vanilla. Or use peppermint flavoring instead.
