Description

Do yourself a favour and try this Healthy Orange Chia Cake. It’s quick to make, incredibly delicious and good for your health. Gluten-free and sugar-free.

Ingredients

  • FOR THE CAKE:
  • 2 Tablespoons Chia Seeds
  • 1 cup Water
  • 1 cup Buckwheat Flour
  • ½ cups Ground Almonds
  • 1 teaspoon Baking Powder
  • 1 teaspoon Vanilla Powder
  • 1 teaspoon Salt
  • 2 Tablespoons Unsweetened Applesauce
  • ⅓ cups Clear Honey
  • 1 whole Large Orange, Zest And Juice
  • 1 Tablespoon Coconut Oil, Melted
  • FOR THE FROSTING:
  • 1 Tablespoon Cacao Powder
  • 1 Tablespoon Maple Syrup
  • 1 Tablespoon Coconut Oil, Melted

Preparation

Soak the chia seeds in the water for 10 minutes.

Preheat oven to 180 C/355 F.

In a medium sized bowl mix together all of the dry ingredients (flour through salt).

Whisk together the chia seed mixture, unsweetened applesauce, honey, orange zest, orange juice and coconut oil in a separate larger bowl.

Gradually stir the dry ingredients into the wet. Make sure you mix everything together really well. I used a whisk.

Pour the batter into a greased 20×20 cm baking dish and bake the cake for 20 minutes. When done, the cake should feel firm and a toothpick should come out clean when inserted in the center.

To make the chocolate frosting, combine all of the ingredients together in a bowl and mix. Pour over the cake when it is cooled down.
