Description

Soft and pillowy on the inside with a hint of holiday spice and a crunchy cinnamon sugar coating. Oh yes. The ultimate comfort cookie on a very chilly day.

Ingredients

  • FOR THE COOKIES:
  • 1-½ cup White Whole Wheat Flour
  • 1-½ cup All-purpose Flour
  • 2 teaspoons Cream Of Tartar
  • 2 teaspoons Baking Soda
  • ½ teaspoons Salt
  • ¼ teaspoons Nutmeg
  • 2 teaspoons Cinnamon
  • ½ cups Butter
  • 1 cup Granulated Sugar
  • ½ cups Unsweetened Applesauce
  • 2 teaspoons Vanilla Extract
  • 2 whole Eggs
  • FOR THE COATING:
  • 3 Tablespoons Sugar
  • 1 teaspoon Cinnamon

Preparation

Combine flours, cream of tartar, baking soda, salt and spices in a medium-sized bowl, mix well and set aside.

In a separate larger bowl, beat together the butter and sugar until creamy. Add the applesauce, vanilla and eggs and beat well. Turn the mixer on low and slowly add in the flour mixture, beating until combined. Cover and chill for about 1 hour.

In a small bowl combine the coating ingredients. Preheat oven to 350 F. Thoroughly grease one or two baking sheets and set them aside.

Using about 2 tablespoons of dough (depending on how big you like your cookies) roll each scoop into a ball and coat with sugar mixture. Place on the well greased cookie sheet, spacing them about 2 inches apart.

Bake for approximately 8-9 minutes. Do not over-bake. You want them to look ever so slightly underdone because they will finish baking on the hot cookie sheet even after you pull them out. Remove from oven and set the pan on a rack. Let cookies sit on the hot pan for a couple minutes before moving them.

I got 23 large cookies out of this batch at 145 calories apiece.
