These sugar cookies are light, sugary and delicious.
Preheat oven 350F.
Whisk flour, salt and baking powder in a large bowl. Cream shortening and sugar. Add eggs and vanilla extract, including almond extract if using.
Add dry ingredients and milk to shortening mixture. Roll out on a floured surface and cut out cookies using your favorite cookie cutters.
Place cut out cookies on prepared baking sheet and bake for 10-12 minutes. Let cookies sit for a few minutes out of the oven before transferring to a cooling rack.

I was thrilled to see almond extract in your recipe! My great grandmother’s sugar cookie recipe called for almond extract, and in my opinion, that’s the only way to go!
