These cookies are full of green tea flavor and will melt in your mouth!
1. Preheat oven to 350ºF.
2. Line a cookie sheet with aluminum foil or parchment paper. Or alternately, line a mini-muffin pan with mini cupcake liners.
3. In a medium bowl, cream butter and sugar until light and fluffy.
4. Add in egg and beat until well-combined.
5. Add vanilla, baking soda, and salt. Incorporate well. Stir in lemon juice.
6. Mix in the flour and matcha until just combined. Be careful not to over-mix; dough should be a little crumbly.
7. Scoop cookie dough onto baking sheet or mini-muffin pan with a 1-inch scoop, leaving an inch or two between the cookies on the baking tray.
8. Bake at 350ºF for 10 minutes.
