Though the word “cookies” is in the title, a better description would be “nibbly bites of healthy deliciousness.” Sweetened only with agave nectar, these cookies are low in the glycemic index and South Beach Diet friendly.
Preheat oven to 350 degrees.
Mix all ingredients in a bowl until thoroughly combined.
Drop rounded tablespoonfuls onto a cookie sheet. Use a fork to gently flatten them to about 1/2 inch thick.
Bake for 12 minutes, rotating cookie sheets midway through baking.
