Description

This is my favorite recipe! The molasses adds a rich moistness to this chewy cookie. And they actually improve with age! I once sent these to my daughter when she was studying abroad in Hong Kong and they were still great!

Ingredients

  • ½ cups Shortening (creamed)
  • 1-¼ cup Sugar
  • 2 whole Eggs
  • 6 Tablespoons Molasses
  • 1-¾ cup Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Salt
  • 1 Tablespoon Cinnamon
  • 2 cups Oats (regular, Not Quick Cooking)
  • ½ cups Pecans
  • 1 cup Raisins

Preparation

Mix the creamed shortening, sugar, eggs and molasses.
In a separate bowl, sift together the flour, soda, salt and cinnamon. Mix the dry ingredients into the wet ingredients and stir until well combined. Next, fold in the oats (old fashioned oats, not the quick cooking kind), pecans and raisins.

Bake at 350 for 9-12 minutes, depending on your oven. Cookies should NOT be browned when removing from oven… They should be puffy and look undercooked. After they have cooled for 5 minutes or so on your cookie sheets, remove the cookies to wire racks.

These cookies are very moist and chewy and actually improve with age. So they ship well to homesick children.

I typically double the recipe.
