These tasty cookies are a delightful alternative to chocolate chip. My daughter came home with this recipe after a visit to Grandpa’s house and they’ve been a favorite ever since.
Cream together butter, sugar, brown sugar, molasses, eggs, cinnamon, and vanilla.
Mix the flour, baking soda, and salt and add gradually until combined.
Add the oatmeal, one cup at a time until combined, then add the coconut and butterscotch chips.
Drop by spoonfuls on a well-greased baking sheet.
Bake at 375 degrees for 15 minutes, but check them a little early. Cookies are done when just set. Remove to cooling racks right away.
