Chocolate cake-like cookie iced with fudge. We keep it in the refrigerator until ready to eat. Simply delicious.
Use an electric mixer to cream brown sugar and oleo. Add eggs and beat well. Add salt, baking powder and cocoa to flour. Put baking soda in buttermilk. Add flour mixture alternately with buttermilk to the brown sugar and oleo. Drop by teaspoonfuls on cookie sheets with parchment paper.
Bake in a 375-degree oven for about 10-12 minutes. Ice with fudge. We use the recipe from the Jet Puff marshmallow creme. A tip for icing the cookies: use a large spoon and pour the hot fudge on the cookies.
