Description

It is hard to find an old fashioned gingerbread these days, but I think that this recipe is really good. It is truly more of a bread than a cake, as there is no sugar. But it is still a dessert to me due to its spicy molasses flavored sweetness. I like to bake it like a cake, and top it with whipped cream and crystallized ginger, but you could also bake it in a loaf pan and serve it with coffee at breakfast.

Ingredients

  • 1 whole Large Egg
  • ½ cups Sugar
  • ½ cups Dark Molasses
  • 5 Tablespoons Unsalted Butter, melted
  • ⅔ cups Whole Milk
  • 1-½ cup All-purpose Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • ¼ teaspoons Nutmeg
  • ¼ teaspoons Cloves
  • 2 teaspoons Ginger
  • 2 teaspoons Cinnamon

Preparation

Preheat oven to 350 degrees (F). Prepare an 8″ square pan with non-stick spray.

In the bowl of a mixer, mix together the egg, sugar, molasses, butter and milk. In a separate bowl, mix together the flour, baking soda, salt and spices. Add the dry ingredients to the batter, and mix until everything is well combined.

Pour the batter into the pan, and bake for about 30 minutes or until a toothpick comes out clean. Let the cake cool, and then slice and serve warm.

I made this, along with some spice cake, to add into The Smart Cookie Cook’s Gingerbread Chocolate Pumpkin Mousse Trifle. I was glad I had some gingerbread left over for munching on! I have some homemade applesauce I’m going to heat up and pour over this with a little whipped cream! Yum!

This is a wonderful recipe. So simple, classic and tasty. Served with a sprinkle of powdered sugar and a side of homemade vanilla bean ice cream~ Definitely a keeper.

This was delicious! I like it with a little bit of whipped cream, too. Mine did “sink” in the middle, but I live at high altitude, which throw off cakes/breads. I highly recommend this recipe!

I had a craving for old fashioned gingerbread and sought this recipe out. I made it last night, was impressed with how quick and easy it was to put together, and was brought back to the days of baking with Grandma when I pulled it out of the oven. Once it cooled, I helped myself to piece of the light, spicy bread. It is perfect. Not too sweet, dense or gooey. This could easily be turned into a decadent dessert with a dollop of fresh whipped cream and a sliver of candied ginger. I will be baking and sharing this recipe whenever I have the chance.
