I made this, along with some spice cake, to add into The Smart Cookie Cook’s Gingerbread Chocolate Pumpkin Mousse Trifle. I was glad I had some gingerbread left over for munching on! I have some homemade applesauce I’m going to heat up and pour over this with a little whipped cream! Yum!

This is a wonderful recipe. So simple, classic and tasty. Served with a sprinkle of powdered sugar and a side of homemade vanilla bean ice cream~ Definitely a keeper.

This was delicious! I like it with a little bit of whipped cream, too. Mine did “sink” in the middle, but I live at high altitude, which throw off cakes/breads. I highly recommend this recipe!

I had a craving for old fashioned gingerbread and sought this recipe out. I made it last night, was impressed with how quick and easy it was to put together, and was brought back to the days of baking with Grandma when I pulled it out of the oven. Once it cooled, I helped myself to piece of the light, spicy bread. It is perfect. Not too sweet, dense or gooey. This could easily be turned into a decadent dessert with a dollop of fresh whipped cream and a sliver of candied ginger. I will be baking and sharing this recipe whenever I have the chance.
