Description

A delicious way to enjoy fall apples.

Ingredients

  • 3 cups Diced Apples
  • 1 cup Vegetable Oil
  • 2 whole Eggs
  • 2 teaspoons Vanilla Extract
  • 2 cups Sugar
  • 2 cups All-purpose Flour
  • 1 teaspoon Salt
  • 1 teaspoon Baking Soda
  • 1 cup Pecans, Chopped
  • Powdered Sugar, Optional Garnish

Preparation

Preheat oven to 350 degrees (F).

Mix wet ingredients in a large bowl. In a separate large bowl, sift together dry ingredients. Add dry ingredients into wet ingredients and stir until well combined. Fold in pecans.

Grease and flour a 13″ x 9″ or 10″ round cake pan. Pour in cake batter and bake for fifty minutes to one hour. A toothpick inserted should come out clean when it’s done.

Garnish with powdered sugar if desired. Great warm or at room temperature.

Have just made this using 3 cups of rhubarb (put in the cake raw – not stewed) and it’s come out lovely. I tend to sprinkle the top with soft brown sugar just before I out it in the oven which gives it a beautiful crunchy texture.

This is a wonderful recipe and one that I will certainly make again. I added a teaspoon of cinnamon, which was a good addition. Next time I make it, I plan to use some applesauce in place of some of the oil. Thank you for sharing this tasty recipe – it’s perfect for autumn!

Love this recipe! I’ve also made it with a 1 1/2 cups apple sauce / stewed apple and 1 1/2 cups fresh apple chunks and it comes out great.

This version doesn’t have cinnamon in it – I usually add a teaspoon into the dry ingredients – yum!
