Description

Eggnog-Iced Butter Cookies are perfect for your holiday cookie swap or holiday parties!

Ingredients

  • FOR THE COOKIES:
  • 1 cup Unsalted Butter, Melted And Cooled
  • 1-½ cup Granulated Sugar
  • 2 whole Large Eggs
  • 1 teaspoon Pure Vanilla Extract
  • 2-¾ cups All-purpose Flour
  • 1 teaspoon Baking Powder
  • Optional For Decoration: Candy Sprinkles
  • FOR THE ICING:
  • ½ cups Powdered Sugar
  • 2 Tablespoons Eggnog (Add A Bit More As Needed, Until Pourable)
  • ¼ teaspoons Ground Cinnamon

Preparation

For the cookies:
1. Preheat oven to 350 F.
2. In a large bowl whisk together melted butter, granulated sugar, eggs and vanilla extract until well incorporated.
3. Next whisk in flour and baking powder until cookie dough is formed.
4. Place the cookie dough in the refrigerator for at least 30 minutes.
5. Next scoop the dough into tablespoon-sized balls and place on a parchment covered cookie sheet, spacing them about 2 inches apart.
6. Bake cookies for 10-12 minutes. Remove from oven, set pans on a rack and let cookies cool before icing.

For the icing:
1. Whisk together all of the icing ingredients, adding eggnog until the mixture reaches drizzling consistency.
2. Drizzle icing over the tops of cookies in decorative pattern.
3. Optional: Add sprinkles to tops of cookies and serve.
