Sweet and light, with no eggs. To switch it up, I used powdered sugar instead of granulated.
Preheat oven to 325 F. Line 2 cookie sheets with parchment paper.
In a medium bowl, stir together the flour, soda and salt. Set aside.
In a large bowl, cream together the margarine, sugar and vanilla. Add the flour mixture and beat well to combine. Stir in the oats and chocolate chips.
Drop tablespoons of dough onto the cookie sheet about 1-2 inches apart. Flatten slightly with a fork dipped in flour.
Bake for 10-12 minutes or until edges are just beginning to brown. Remove from oven then remove cookies to a wire rack to cool completely.
Makes 3-4 dozen.
