Description

You don’t even need a mixer to make these Easy Chocolate Cupcakes! Just stir together and bake—perfect for your Valentine!

Ingredients

  • 1 cup All-purpose Flour
  • ½ cups Unsweetened Cocoa Powder
  • 1 teaspoon Baking Powder
  • ¼ teaspoons Baking Soda
  • ¼ teaspoons Fine Sea Salt
  • 1 teaspoon Chai Spice Mix (optional)
  • ½ cups Granulated White Sugar
  • ½ cups Light Brown Sugar, Packed
  • ⅓ cups Vegetable Oil
  • ½ cups Buttermilk
  • ⅓ cups Hot Water Or Hot Coffee
  • ½ Tablespoons Vanilla Extract
  • 1  Large Egg

Preparation

Preheat oven to 360°F (180°C) and line a 12-cup cupcake pan with liners.

Add all dry ingredients (flour, cocoa powder, baking powder, baking soda, salt, chai spice (if using) to a large bowl and whisk until well combined.

Add all wet ingredients (sugars, oil, buttermilk, hot water or coffee, vanilla, egg) to a medium bowl or measuring cup and whisk until smooth. Add wet ingredients to the dry ingredients and stir (no whisk—use a wooden spoon or spatula!) just until combined. The batter will be thin.

Divide batter between prepared cupcake liners. Bake for 20 minutes or until a toothpick inserted into the middle comes out clean. Cool in the pan for 5 minutes, then remove to a cooling rack to cool completely before adding any frosting.
