Description

Chewy and crunchy! Flax seeds and whole wheat flour make them good for you. Right? I made a batch of these and took them to work. They disappeared before noon.

Ingredients

  • 1 cup All-purpose Flour
  • ¼ cups Whole Wheat Flour
  • ¼ teaspoons Baking Soda
  • ½ teaspoons Baking Powder
  • 2-½ cups Quick Cooking Oatmeal
  • ½ cups Flax Seeds
  • 1 teaspoon Salt
  • 1 cup Butter Flavored Crisco Or Butter
  • 1 cup Granulated Sugar
  • 1 cup Light Brown Sugar
  • 2 whole Eggs
  • 2 teaspoons Vanilla Extract
  • ½ cups Golden Raisins
  • 1-½ cup Raisins

Preparation

Preheat oven to 350ºF.

Mix together flours, baking soda, baking powder, oatmeal, flax seeds and salt in a large bowl.

Cream together Crisco/butter and sugars on high speed till light and fluffy. Add eggs one at a time, mixing well after each egg. On low speed, add vanilla. Gradually stir in dry ingredients. With a wooden spoon, mix in raisins.

Lightly grease cookie sheets. Drop tablespoon-sized dough balls onto cookie sheets. I can fit twelve cookies onto a sheet. Bake in the preheated oven for 15 minutes till lightly browned. Let cool for a few minutes then carefully place on a cooling rack.
