I know what you’re thinking: “Chocolate and bacon? Seriously?” But yeah. These cookies are aMAZing. Rich and decadent, with a hint of smoky salt from the bacon. Perfection.
1. Preheat oven to 350 degrees F.
2. Cook bacon until browned and crispy. Set bacon aside to cool. Crumble once cooled. Reserve bacon grease.
3. Beat together sugar, butter, eggs, and vanilla extract in a large bowl until smooth. Stir in flour, cocoa powder, baking soda, and salt. Dough will be dry/crumbly. Add enough of the reserved bacon grease a little at a time until you have a smooth, glossy dough (I usually use about 2 tablespoons worth).
4. Stir in chocolate chips and crumbled bacon.
5. Drop tablespoons of dough onto an ungreased cookie sheet about 2 inches apart.
6. Bake for 10 to 12 minutes. Let stand 5 minutes before transferring to wire racks to cool completely.

The adage that bacon makes everything better is true and I have the witnesses to prove it. I brought these to a BBQ yesterday and they were a HUGE hit! If you like a little savory (or a lot depending on the amount of bacon you add) with your sweet than I would highly recommend these cookies.
The only change I had to make was that I added 3 tablespoons of bacon fat to get the smooth, glossy dough described. I was a little hesitant but the results were so worth it that I will not think twice if I have to add that much the next time.
