These are great, versatile oatmeal cookies. They are soft and full of flavor. As my “name” suggests, everything I make first passes the “chef test” and is approved by my very picky chef husband. I made these for him the very first time I ever made him dinner and he proposed a few months later. Coincidence? I think not.
Preheat oven to 350ºF.
Soften the butter and blend with both sugars until smooth. Add the eggs and the vanilla. Mix well. Add the rest of the ingredients and mix well. If using raisins, chocolate chips, nuts, etc. add them at this point and mix well. Portion and bake for about 10 minutes or until the edges begin to brown. Allow to cool on the cookie sheet for one minute.
Dessert option: when cooled, use two cookies and as much vanilla ice cream as you wish to make ice cream sandwiches. Eat immediately or wrap individually and freeze for later. They maintain their softness so they can eaten right out of the freezer.
