Description

A decadent and quick breakfast, snack or dessert. Eat the whole high fiber batch for only 390 calories or share! Easily made vegan or gluten-free.

Ingredients

  • 1 Tablespoon Flax Meal
  • 2 Tablespoons Water
  • ½ cups Mashed Banana
  • ⅛ teaspoons Pure Almond Extract
  • ½ cups Quick Oats (not Instant)
  • 1 Tablespoon Quick Oats (not Instant)
  • ½ ounces, weight Dark Chocolate, Chopped
  • ⅓ cups Sweet Cherries, Seeded And Roughly Chopped

Preparation

1. In a small bowl (I use a coffee mug) combine the flax meal and water, mix well and place in the refrigerator for at least 5 minutes.

2. Preheat the oven to 350 F and line a cookie sheet with a Silpat or parchment (since these cookies have no oil or butter they even stick a little to the parchment so don’t skip this step).

3. In a medium sized bowl mash the banana until a few small lumps remain. Stir in flax egg, almond extract and oats until well combined. Fold in chopped chocolate and cherries.

4. Use an ice cream scoop to drop the cookies onto the Silpat- or parchment-lined cookie sheet. Bake at 350 F for 13 to 15 minutes. Remove from oven.

5. Allow cookies to cool on the sheet. Once cooled use a spatula to remove them.
