Description

This is my husband’s specialty and our kids like to call it “Daddy’s Famous Caramel Corn.” The ingredients are things we always have on hand and it is so simple to make.

Caution: because it is so easy to make, it can be highly addictive. You have been warned!

Ingredients

  • 2 bags (3.3 Oz. Bag) Microwave Popcorn (about 16 Cups Of Popped Popcorn)
  • ½ cups Butter
  • 7 whole Large Marshmallows (or 70 Mini Marshmallows)
  • ½ cups Brown Sugar

Preparation

Melt the butter, marshmallows and brown sugar in a saucepan over medium heat, stirring constantly. Dump the popped popcorn in a big bowl and drizzle the caramel sauce all over the top. Toss to coat!

(To be honest, we always double the caramel sauce but keep the two bags of popcorn. We are super naughtly like that.)

Helpful tip: if using microwave popcorn and you need to get rid of the unpopped kernels, after you have dumped the popcorn into a bowl (before adding the caramel) place a cooling rack over the top of the bowl and shake over your sink or garbage. All the unpopped kernels will fall out, leaving the popped popcorn in the bowl.
