A delightfully thin and crispy sugar cookie with just a hint of almond flavor.
Cream butter and sugar. Add egg and mix well. Add soda, cream of tartar, vanilla, and almond extract. Mix well. Gradually mix in flour. Refrigerate dough for at least one hour (dough should be very chilled).
Roll dough out very thin on a very well-floured surface. Cut cookies out and bake at 375 degrees for 5-6 minutes. Since the cookies are so thin, they will burn easily, so watch them closely. Cookies are done when a little bit of color just begins to show around the edges.
Allow cookies to cool, and then ice them with a powdered sugar glaze (add a small amount of milk to powdered sugar until it reaches desired consistency). Store in a cool place.
Makes about 4 dozen cookies.
