Description

A cookie using cranberries and white and dark chocolate chips.

Ingredients

  • 1 stick Unsalted Butter, Room Temperature
  • 1-⅓ cup Sugar
  • 2  Large Eggs
  • 2-½ cups Flour
  • 1 teaspoon Baking Powder
  • ¼ teaspoons Salt
  • ⅛ teaspoons Baking Soda
  • 1 cup White Chocolate Chips
  • 1 cup Dark (or Semi-sweet) Chocolate Chips
  • 1 cup Dried Cranberries

Preparation

Preheat oven to 350 degrees F.

Cream the butter in a mixing bowl using a mixer, about 2 minutes. Add sugar and beat on medium speed until light and fluffy. Add eggs, one a time, making sure it is incorporated fully before adding the next one.

Add flour, baking powder, salt, and baking soda to creamed mixture. Mix on low speed until it is all incorporated.

Add the chips and cranberries and mix on low until just dispersed.

Using a cookie scoop, drop cookies onto a cookie sheet and bake for 10-12 minutes, or until lightly browned. Cool on wire rack.

Yields: 3 dozen cookies

These were very yummy. Cookie has a great texture. Make up quickly as you can fit a bunch on a cookie sheet as they hardly spread. And due to the cranberries, they’re practically healthy (or so I tell myself), so they make a great breakfast treat!
