This recipe was shown on Regis and Kelly. With so many unusual ingredients in the mix, I had to give them a try. Delicious! Don’t let the coffee grounds scare you!
Preheat oven to 350 degrees.
In a large mixing bowl, cream together the butter, sugars and coffee grounds.
In a small bowl, whisk together the egg and vanilla then add to the sugars, butter and coffee ground mixture.
In a large mixing bowl mix together the, oatmeal, flour, potato chips, pretzels, Fritos, peanut butter chips, chocolate chips and baking soda.
Slowly add the the dry ingredients to the wet mixture.
Shape into balls about two tablespoonfuls each.
Place the balls two inches apart on a Silpat- or parchment-lined cookie sheet and bake for 10-12 minutes. Cool for 2 minutes and then transfer to a cooling rack.
