These are a ‘grown up’ version of chocolate chip cookies. A little more depth and sophistication to them. Try them, I hope you will agree!
1. Preheat oven to 350 F. Toast almonds for approximately 10 minutes in the oven. Cool completely.
2. Dissolve coffee in 2 Tablespoons hot water, set aside.
3. Mix flour, soda, and salt together. Beat butter and sugar on medium speed until light and fluffy.
4. Add cooled coffee, vanilla and eggs to butter mixture, beat with mixture until all is combined. Reduce mixer to low, add flour mix. Mix until all is incorporated.
5. Add chocolate chips and almonds. Beat with mixture until all is blended.
6. Drop by teaspoonfuls onto ungreased cookie sheet 3″ apart. Bake for 10 minutes or until browned. Cool before removing from cookie sheet.
Yield: approximately 4 dozen, depending on how big you make your cookies.
