Description

I love my regular no-bake cookie recipe, but have you ever tried one with coconut?

Ingredients

  • ½ cups Butter
  • ½ cups Milk
  • 2 cups Sugar
  • 3 Tablespoons Cocoa
  • ½ cups Peanut Butter (I Prefer Crunchy)
  • 3 Tablespoons Corn Syrup
  • 1 teaspoon Vanilla
  • ¼ teaspoons Salt
  • 2-½ cups Oats (I Used Quick Oats)
  • ¾ cups Shredded Coconut

Preparation

In a large saucepan, bring butter, milk, sugar, and cocoa to a boil over medium heat, stirring often. Remove from heat and stir in peanut butter, corn syrup, vanilla, and salt. Stir in oats and coconut.

Drop by spoonfuls onto waxed paper or a silicone baking mat to cool. (If you’ve never made no-bake cookies before, they set up as they cool, so don’t be afraid if they seem a bit fluid.)

Makes about 2 dozen cookies.

Great and fast recipe for a last minute sweet! The only thing I would do different is to drop them with a small cookie scoop so they are more like little balls because they are so sweet and I can’t handle eating a whole cookie. Thanks for sharing your recipe!
