Description

A sweet coconut-flavored cookie with a crispy exterior and a soft and chewy center.

Ingredients

  • 2 whole Egg Whites
  • ½ cups Sugar
  • ½ teaspoons Vanilla Extract
  • 1 cup Coconut, Unsweetened, Shredded, Reduced Fat
  • 2 Tablespoons Cake Flour
  • ¼ teaspoons Salt

Preparation

Preheat oven to 350 F. Line a baking sheet with parchment paper and set it aside.

Into a large bowl add egg whites, sugar and vanilla. Mix until combined.

Add coconut into the egg white mixture and stir until combined.

Add cake flour and salt and mix until combined.

Drop tablespoon-sized scoops of batter onto the prepared cookie sheet, about 2″ apart. Bake for 12-15 minutes or until the bottom is lightly brown.
