This is a wonderful, super simple, easy cookie that’s naturally gluten free. Whip a batch of these up to please those with special dietary needs and everyone else in the house as well!
1) Preheat the oven to 350 degrees F. Combine all ingredients in a saucepan, place over medium heat and stir constantly until the mixture reaches 130 degrees F.
2) Scoop the macaroons (using a #25 cookie scoop or a small ice cream scoop) onto a parchment-lined sheet pan.
3) Bake until cookies are just golden brown, about 12-15 minutes.
4) When completely cool, serve as is or dip bottoms into tempered (or coating) chocolate and allow to set on a clean sheet of parchment.
