Description

A tasty cookie that is both crisp and chewie!

Ingredients

  • 1 cup Butter
  • 1 cup Brown Sugar
  • 1 cup Granulated Sugar
  • 2 whole Eggs, Beaten
  • 2 teaspoons Vanilla
  • 2 cups Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • ¾ teaspoons Salt
  • ½ teaspoons Nutmeg
  • 2 cups Rolled Oats
  • 2 cups Sweetened Coconut

Preparation

Cream butter. Add sugars gradually. Add egg and vanilla. Beat until light and fluffy. Add flour, baking powder, soda, salt and nutmeg to the sugar mixture. Stir in oats and coconut. Drop by teaspoonfuls onto a cookie sheet. Bake in a 350F oven until golden, about 12 – 15 minutes.

The favorite of three different batches of cookies I made today to hand out to students as they leave the high school across from my house tomorrow. Next time I’ll add a bit more nutmeg. It added an unexpected depth of flavor.

these are really good! I used half WHITE whole wheat flour so that I could convince myself that these were actually good for me, and it was a great addition. and to convonce my KIDS that they could eat a cookie with coconut in it, I threw in a few mini chocolate chips. Yum.
