A soft coconut cookie with vanilla cream frosting.
Beat butter and sugars. Add eggs and vanilla and mix well. Add pudding mix, soda, and flour, and mix just until combined. Fold in shredded coconut.
Drop spoonfuls of dough onto a baking sheet and bake at 350ºF for 8-10 minutes. Allow to cool before frosting.
For frosting, combine butter, milk, vanilla, and powdered sugar. Add more powdered sugar as necessary to reach desired consistency.
Spread frosting on cooled cookies.
