Description

A lovely carrot cake made with coconut and vanilla then topped with cream cheese frosting. Perfect for springtime.

Ingredients

  • FOR THE CAKE:
  • 1 cup Flour
  • ¼ teaspoons Salt
  • 1-¼ teaspoon Baking Powder
  • 6 Tablespoons Butter, Softened
  • ¾ cups Sugar
  • 2 whole Eggs
  • 1-½ teaspoon Vanilla
  • ½ cups Coconut Milk
  • 1 cup Grated Carrots
  • ½ cups Shredded Coconut Plus More For Topping
  • FOR THE FROSTING:
  • 4 ounces, weight Cream Cheese, Softened
  • 4 Tablespoons Butter, Softened
  • ½ teaspoons Vanilla
  • 1-½ cup Powdered Sugar

Preparation

Preheat oven to 350ºF. Grease and line the bottom of a 9-inch round cake pan with parchment paper.

In a bowl, stir together the flour, salt, and baking powder. Set aside.

In the bowl of a stand mixer fitted with the paddle attachment, cream together the butter and sugar until light and fluffy. Incorporate the eggs one at a time followed by the vanilla. Add the flour mixture in small amounts alternately with the coconut milk (flour, milk, flour, milk, flour), beating until well combined. Add in the carrots and coconut and mix to combine.

Spread the batter into the prepared cake pan. Bake 30-40 minutes or until cooked through and set. Place pan on a cooling rack and cool cake for 20 minutes before turning cake out of pan to cool completely.

For the frosting:
In the bowl of a stand mixer fitted with the paddle attachment, cream together the cream cheese and butter until smooth. Add the vanilla. Turn the speed down to low and add the powdered sugar, beating until smooth.

To assemble the cake:
When the cake is completely cool, invert the cake out of the pan onto the serving plate. Frost the top of the cake generously with cream cheese frosting. Sprinkle top of cake with coconut. Slice and serve.

Note: This recipe can easily be doubled to make a two-layer cake.

Delicious! Didn’t use coconut because my kids don’t like it. I also made a litle bit more frosting. Tourn out great. I also think that cake taste even better the next day.

This cake was delicious. Very moist. I especially like it because it is a small recipe, just the right size for a small family, but could easily be doubled as a sheet cake, or as a layer cake. Just make a little more frosting. Yummy!

This cake is awesome!! A wonderful change from traditional carrot cake…not that there’s anything wrong with tradition, but sometimes change is good! I’ve made this several times now and it’s definitely a keeper :)
