Description

A coconut cookie with a crispy outer and a soft center and full of milk chocolate M&Ms.

Ingredients

  • 2-½ cups Whole Wheat Pastry Flour
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • 1 cup Butter, Room Temperature
  • ¾ cups Presweet Tagatose Or Granulated Sugar
  • ½ cups Brown Sugar
  • ½ cups Egg Subsitute Or 2 Large Eggs
  • ½ teaspoons Vanilla Extract
  • ½ teaspoons Coconut Extract
  • ¾ cups Unsweetened Shredded Coconut
  • ½ cups Chocolate M&Ms (Coconut Ones Would Be Great, Too)

Preparation

Preheat oven to 350ºF. Line 2 baking sheets with a Silpat or parchment paper; set aside.

In a bowl add flour, baking soda and salt; set aside.

In a large bowl, cream butter and sugars until combined. Beat in eggs, vanilla and coconut extract until smooth. Gradually add flour mixture until combined.

Stir in shredded coconut and M&Ms.

Drop by well rounded teaspoons onto prepared baking sheets. Bake 8-10 minutes until golden brown.
