A recipe my husband’s grandmother shared with me, these cookies are classic and beautiful. The ingredients are basic and simple, but the end results are elegant and delicious. A wonderful holiday treat. Enjoy!
Mix softened butter, brown sugar, egg yolks, vanilla and salt until well combined. Add flour and stir to combine.
Roll dough into one-inch balls. Dip balls in slightly beaten egg whites and then roll in finely chopped pecans. Place on parchment-lined cookie sheets about one inch apart.
Bake at 350 degrees for five minutes. Remove cookie sheets from the oven and add a thumbprint with a spoon. Return cookies to the oven and bake for eight minutes longer.
Place cookies on a wire rack to cool. Once cookies have cooled completely, fill print with powdered sugar icing, jam or jelly.
Yields approximately 3 dozen cookies.
Note: the underside of a teaspoon works beautifully for adding the print to the cookie.

I make a similar thumbprint cookie. I use half shortening and half butter. This is one of our family favorites. It also is an impressive cookie to take to gatherings.
